I made some Low Carb Jalepeno poppers and they were freakin delish. The cream cheese gets a sort of cheesecake quality, so it’s like a savory veggie cheesecake MMN. It’s super easy so here’s a recipe.
Ingredients
-Jalepenos, however many you want (keep in mind, each pepper makes two poppers)-Cream Cheese, or any kind of cheese with a cream cheese like texture-Salt n Pepper, whatever other seasonings you like. (Optional)1: Pre-Heat your oven to 375 F (190 C) and line a baking sheet with tin foil.
2: Cut the stem off of the Jalepeno, then cut the pepper in half. 
3: Using a spoon, thoroughly scrape out the membrane and seeds of the pepper. 4: Use a spoon to scoop the cream cheese into the peppers. 
5: Line them up on your baking sheet and bake them for 18-20 minutes. 
Notes: 
-You can add or take away time depending on your tastes. I found that the longer you cook the peppers, they get a little bit too soft for me. They also lose a bit of their spice, so you’ll need to add seasonings to your taste. 
-You can totally mix in stuff with the cheese. The recipe I was going off of had bacon in it, but I omitted the bacon because it tastes too salty for me. Soo, you can basically add in whatever you want. 
-This is super low carb so it’s good if you’re on the Atkin’s diet! (Like me XD) Each one is less than one carb each and they’re really filling so they make a really nice snack.
